Bang Bang Chicken Rice Bowls
Spicy ground chicken mixed with the ultimate Bang Bang sauce, is a delicious feature in a rice bowl or in lettuce cups for a fresh and flavourful meal!

This chicken is SO good on rice, accompanied by fresh cucumber, shredded carrots and red cabbage, avocado, and garnished with cilantro, scallions, and sesame seeds.
Making this chicken as a lettuce cup is a great way to reduce your carbohydrate intake, for example, if you follow a ketogenic diet.

The absolutely addictive Bang Bang sauce is a savory blend of mayonnaise, sweet Thai chili sauce, Sriracha, maple syrup, soy sauce, and fish sauce. You will want to guzzle gallons of this sauce!

Let’s talk about the ingredients for Bang Bang Chicken Rice Bowls
Ground chicken – Easy to cook and incredibly affordable, ground chicken cooks up fast and becomes incredibly flavourful with the spices and Bang Bang sauce. You can substitute ground turkey, if you prefer.
Rice – If you will be having the rice bowl option, you can use whatever rice you prefer, using the method that’s easiest for you.
Lettuce – If you will be having the lettuce cups option, I would suggest butter lettuce or iceberg leaves.
Spices – I’ve used a blend of garlic powder, paprika, ground ginger, and onion powder. If you have the ingredients on hand and the time, you can use fresh garlic, onion, and ginger instead.
Bang Bang Sauce — A mixture of mayonnaise, sweet Thai chili sauce, Sriracha, maple syrup, soy sauce, and fish sauce. You can use honey instead of maple syrup if that’s what you have.

Vegetables — I’ve used sliced cucumber, avocado, shredded carrots and red cabbage, scallions and for garnish I used cilantro, scallions, and sesame seeds. You can also add edamame beans for extra protein!

Equipment

Ingredients
Bang Bang Sauce
- 1 cup mayonnaise
- 2 tablespoons sweet Thai chili sauce
- 1 tablespoon maple syrup or honey
- 2 teaspoons Sriracha chili sauce or more if you like it spicy
- 2 teaspoons soy sauce
- ½ teaspoon fish sauce
Chicken
- 1 lb ground chicken
- 1 tablespoon neutral oil such as avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- 1 teaspoon onion powder
- 1 bunch scallions sliced, white and green parts separated
Rice Bowl Option
- 2 cups cooked rice of your preference
- 1 cucumber sliced
- 1 carrot peeled and shredded
- ¼ red cabbage shredded fine
- 1 avocado peeled and sliced
- Small bunch cilantro chopped
- Sesame seeds for garnish
Lettuce Wrap Option (4 per person)
- Any of the vegetables from above
- Bang Bang Sauce
- 16 lettuce leaves butter or iceberg lettuce, washed and dried
Instructions
- Prepare rice according to the package directions. Set aside.
Make the Bang Bang Sauce
- In a small bowl, combine mayo, sweet Thai chili sauce, maple syrup, Sriracha, soy sauce, and fish sauce. Stir well. Taste and add more Sriracha if you want it spicier.
Prepare the vegetables
- Slice the cucumber, shred the carrots and cabbage, slice the avocado, chop the cilantro, and set aside. If making lettuce cups, wash and dry the leaves and set aside.
Cook the chicken
- In a skillet over medium high heat, add oil and when shimmering, add the ground chicken, spices, the white parts of the scallions. Cook, stirring, until chicken is well crumbled, cooked through, and nicely browned, about 10 minutes. Just before removing from the heat, add ¼ cup of the Bang Bang Sauce and stir until completely combined.
Assemble the rice bowls
- In a serving bowl, add ½ cup of rice. Top with a quarter of the cooked chicken mixture.
- Add ¼ of the cucumber slices, ¼ of the avocado slices, ¼ of the cabbage, then top with ¼ of the green parts of the scallions and some chopped cilantro, to your taste.
- Drizzle the Bang Bang Sauce over the just the chicken or the entire bowl. Top with sesame seeds.
Assemble the lettuce cups
- If making the lettuce cup option, add a scoop of cooked chicken in the middle of each lettuce leaf. Top with as many vegetables as you like, then drizzle with the Bang Bang Sauce. Top with chopped cilantro and sesame seeds.
