Coconut Lime Bars
These bright and chewy Coconut Lime Bars have a rich, buttery shortbread crust. The lime filling packs a supercharged lime punch; and the coconut adds a sweet, chewy counterbalance to the lime.

Let’s talk about the ingredients for Coconut Lime Bars
Limes – This recipe uses ½ cup of freshly squeezed lime juice, about 4-5 limes, depending on the size of your limes. Don’t substitute bottled lime juice!
Coconut – Use sweetened, shredded coconut
How to slice up Coconut Lime Bars
Keys to success in cutting up these bars:
- Line the pan fully if possible; aluminum foil works best but you can also use parchment paper.
- If you use parchment paper, the filling may leak underneath so you’ll need to run a knife around the edges of the baked bars to release from the pan.
- Chill completely before slicing into squares. You can make them whatever size you like!
- Dust with icing sugar after slicing produces a prettier result.

Ingredients
Crust
- 1-3/4 cup all-purpose flour
- 1/2 cup light brown sugar packed
- 1 cup salted butter
Filling
- 1-1/2 cups sweetened shredded coconut
- 2 cups sugar
- 1/4 cup all-purpose flour
- 4 eggs
- 1/2 cup lime juice freshly squeezed
- lime zest from one lime
- icing sugar for dusting
Instructions
- Pre-heat oven to 350°F. Line a 9 x 13 inch pan with aluminum foil or parchment paper.
To make crust
- In a food processor, mix together flour, sugar, salt, and butter. Pulse until combined and resembles very coarse crumbs. Pour mixture into the prepared pan and press mixture down with your hand until even.
- Bake bottom layer for about 20 minutes, until edges begin to turn colour. Remove from oven, but leave oven on.
To make filling
- Sprinkle half of the coconut over baked crust. In a food processor, mix together sugar, flour, eggs, lime zest and lime juice until blended. Or whisk together in a small bowl. Pour mixture into pan. Sprinkle remaining coconut over top.
- Bake in oven for 25 to 30 minutes, or until top is set. Cool completely; for best results chill in refrigerator until cold.
- Lift cooled bars out of pan using aluminum foil or parchment paper. Cut into bars. Dust bars with icing sugar.
