Prep all your ingredients first, as the noodle dish comes together very quickly! Prepping everything takes about 10 minutes, and the stir-fry takes about 10 minutes for a total of 20 minutes!
Let’s talk about the ingredients — can I Make Substitutions?
Noodles – I used Taiwanese-style sliced noodles, which are made with wheat. They cook in just a few minutes and are easily stir-fried until done. This dish is so customizable, you can use whatever noodle you want. Try different types of noodles each time you make it! Or substitute your favourite rice.
Chicken – I recommend boneless, skinless chicken breasts. Because the chicken is cut into thin small pieces, it cooks quite quickly. You can use chicken thigh meat if you like, or try ground chicken!
Sweet chili sauce — I think this is the star of the dish and makes the sauce glossy, sticky, sweet, and spicy all at the same time! If you can’t find it, you can use chili garlic sauce or chili paste plus some honey. Adjust the amount of chili sauce or paste to your taste.
Can Chili Garlic Chicken Noodles be Gluten-Free?
This Noodle dish can be made gluten-free using the following tips:
- The sauce is thickened with corn starch
- Use rice instead of noodles
- Choose a gluten-free noodle, such as rice stick noodles
The Chili Garlic Chicken Noodles Method
Get all your ingredients prepped and ready before starting, because this dish goes together FAST! First, slice up your chicken breast into thin, bite-size pieces.
Toss the sliced chicken breast in corn starch, soy sauce, and mirin and set aside as you make the marinade.
Combine all the marinade ingredients and set aside as you chop the vegetables.
Grate the garlic and ginger. Chop up the peppers and green onions, and set aside.
Prepare your noodles or rice according to the package directions, depending on the noodles or rice you choose to use!
In a wok or large frying pan, heat the oil until hot. Then add the chicken, stirring until cooked.
Add the garlic, ginger, and peppers, and stir for a minute to combine.
Pour in the sauce and let it come to a good bubble. Allow to reduce a bit before adding the chopped green onions.
Add your prepared noodles and toss to coat. Divide the stir fry noodles among 4 bowls and top with more sliced green onions if desired.
Chili Garlic Chicken Noodle Bowl

- Large skillet or wok
Ingredients
- 1 lb chicken breast boneless skinless
- 1 tbsp soy sauce
- 1 tbsp mirin
- ¼ cup corn starch
- 2 tbsp neutral oil ie. vegetable oil
- 1 inch ginger peeled & grated
- 6 cloves garlic peeled & grated
- 1 bunch green onions
- 3 small mild chili peppers or small sweet peppers
- 2 bundles dried noodles or rice
Chili Garlic Sauce
- ½ cup soy sauce
- ½ cup sweet chili sauce
- 2 tbsp mirin
- 1/3 cup water
- 2 tbsp toasted sesame oil
- Black pepper freshly ground
Instructions
- Slice chicken into thin bite-size pieces and add to a bowl. To the bowl with the chicken, add the corn starch, mirin, and soy sauce, and toss to combine. Set aside.
- Grate the garlic and ginger and set aside.
- Thinly slice the light parts of the green onions. Slice the dark parts of the green onion into 1 inch pieces. Set aside.
- Thinly slice, or julienne, the peppers. Remove the seeds if using hot peppers.
- Add all sauce ingredients into a bowl and stir to combine. Set aside.
- Prepare your noodles according to the package directions.
- Add the oil to a large frying pan or wok over high heat. When hot, add the chicken and stir-fry until cooked, about 5 minutes.
- Add the garlic, ginger, and peppers and stir-fry for a minute to combine. Add the sauce and when the sauce starts to bubble after a minute add the green onions.
- Just before serving, toss in your cooked noodles if using. If using rice, add your rice to a bowl and top with the Chili Garlic Chicken. Top with more sliced green onions if desired.
