Watermelon, Feta, and Basil Salad
Celebrate the bounty of summer at the farmer’s market with this light and refreshing watermelon, feta, and basil salad. Loaded with fresh summer berries and drizzled with balsamic vinaigrette, this fast and easy salad will become your new summer supper staple.
I love to go for a wander around my local farmer’s market, just to see what’s available. My favourite time to go is in the summer. The bounty is incredible! Everything is just picked and oh, so fresh. You never know what will be there, but you can bet that it will taste amazing. You can literally bring summer to your table.
And what says summer more than fresh berries, warmed by the sun? Add freshly-cut watermelon, ice-cold from the fridge. Fragrant basil leaves, torn and tossed with crisp lettuce, — bitter, spicy, and sweet. Tangy feta’s saltiness balances perfectly with the sweet watermelon. The dressing has only three ingredients and tastes divine. In about 10 minutes, you have a beautiful salad. To make this a complete supper, add skewers of grilled prawns or chicken.
Watermelon, Feta, and Basil Salad
Equipment
- 1 Large bowl
Ingredients
- 4 cups mixed lettuce greens
- 1 cup watermelon cubed
- 1 cup summer berries such as blueberries, blackberries, raspberries
- 1/4 cup feta crumbled
- 1/2 cup fresh basil leaves torn
Balsamic Vinaigrette
- 1/4 cup olive oil extra virgin
- 2 tbsp balsamic vinegar
- 1 tsp brown sugar
Instructions
- Toss lettuce, watermelon, berries, and basil in a large bowl. Sprinkle on crumbled feta. Divide into two salad bowls.
- For the vinaigrette, simply mix the ingredients together until well blended. Drizzle salad with balsamic vinaigrette and enjoy!
