Citrusy Smoked Salmon Appetizer
Equipment
- food processor or high speed blender
Ingredients
- 1 Long English cucumber sliced diagonally into 18 slices
- 1 package Smoked salmon lox
- 1/2 container spreadable cream cheese
- 1/4 cup greek yogurt
- 1 lemon zested and juiced
- 1/4 small red onion sliced into small rings
- 4 tbsp fresh chives chopped
- fresh dill sprigs for garnish
Instructions
- In a food processor or clean coffee grinder, pulverize the chives until they are mush. Stir into yogurt and set aside.
- Stir together cream cheese, lemon zest, and lemon juice 1 teaspoon at a time to your taste. I used 3 teaspoons of lemon juice – but I like lemon!
- Spread 1 teaspoon of lemon cream cheese onto the cucumber. Roll a small piece of salmon lox and place it on the cucumber. Lay a small ring of onion on top of the salmon. Place a small dollop of chive cream on top of the onion. Top with a sprig of dill. Serve immediately.
