1Long English cucumbersliced diagonally into 18 slices
1packageSmoked salmon lox
1/2containerspreadable cream cheese
1/4cupgreek yogurt
1lemonzested and juiced
1/4smallred onionsliced into small rings
4tbspfresh chiveschopped
fresh dill sprigsfor garnish
Instructions
In a food processor or clean coffee grinder, pulverize the chives until they are mush. Stir into yogurt and set aside.
Stir together cream cheese, lemon zest, and lemon juice 1 teaspoon at a time to your taste. I used 3 teaspoons of lemon juice – but I like lemon!
Spread 1 teaspoon of lemon cream cheese onto the cucumber. Roll a small piece of salmon lox and place it on the cucumber. Lay a small ring of onion on top of the salmon. Place a small dollop of chive cream on top of the onion. Top with a sprig of dill. Serve immediately.
