Sausage Tortellini Soup
This Tortellini Soup recipe is loaded with spicy Italian sausage, cheesy tortellini, creamy broth, and baby spinach. It makes for an easy, 30-minute meal on a busy weeknight!

This soup has minimal ingredients that don’t need a lot of prep, so it’s ready to eat in under 30 minutes!
Let’s talk about the ingredients for Sausage Tortellini Soup
Tortellini – I used fresh cheese tortellini, found in the refrigerated section of my grocery store. I chose this kind of tortellini, because it only takes about 5 minutes to cook.
Italian Sausage – I used the “hot” flavour of ground Italian sausage, because it’s my favourite! The spicy heat makes soup ultra-warming on a cold day.
Herbs – Rosemary, basil, thyme, and parsley are the herbs used in this soup. You can also used dried herbs, if that’s what you have!
Creamy broth – Chicken stock and heavy cream combine to make this a beautifully creamy, flavourful soup.
Spinach – Baby spinach takes no time to cook so it’s a speedy vegetable to add in, for fibre and vitamins.
Can I Make Substitutions?
Tortellini – There are so many of varieties of tortellini, tortoni, ravioli, available! Feel free to experiment with different flavours. You can also use a short pasta like penne or rotini.
Italian sausage – You can use the mild flavour, if you like it better than hot.
Spinach – You can substitute chopped kale for the spinach, but keep in mind that it takes about 10 minutes to cook, so add it sooner than the spinach.
Herbs – if you can’t find fresh herbs, I like to substitute with 1 tablespoon of Italian seasoning.
How to adapt Sausage Tortellini Soup for food restricted diets
Gluten-free: Use a gluten-free thickener like corn starch or arrowroot flour instead of all-purose flour, and use a bite-sized gluten-free pasta that you like. Depending on the manufacturer or the sausage, you may need to substitute with ground pork and add more seasoning.
Dairy-free: Substitute a dairy-free tortellini or pasta, and use a dairy free milk alternative like coconut milk or oat milk for the broth.
Does Sausage Tortellini Soup freeze well?
The tortellini will absorb more liquid even as it’s freezing, so if a softer texture of pasta is something that bothers you, I would avoid freezing this soup.
Italian Sausage & Tortellini Soup
Equipment
- 1 Large soup pot
Ingredients
- 1 package hot Italian sausage 13 oz or 375g
- 1 package fresh cheese tortellini 12 oz or 350g
- ½ sweet onion diced
- 3 cloves garlic minced
- Pinch red pepper flakes
- Salt & pepper
- 1 Tbsp fresh thyme chopped see note *
- 1 Tbsp fresh parsley chopped see note *
- ½ Tbsp fresh rosemary chopped see note *
- ½ Tbsp fresh basil chopped see note *
- 6 cups chicken stock or 1400 ml
- 1 cup heavy cream or 250 ml
- 2 handfuls baby spinach roughly chopped
Instructions
- In a large pot over medium-high heat, brown sausage meat and onion until sausage is cooked and onion is softened, about 5 minutes. Drain or blot away excess grease if necessary.
- Add garlic, red pepper flakes, salt & pepper, and herbs. Cook until fragrant, about 1 minute.
- Add chicken stock and stir to scrape up any browned bits off the bottom of the pot.
- Add heavy cream. Bring soup to a boil and then reduce heat to a gentle simmer. Add tortellini and cook until tortellini is done according to package directions. The brand I used took 6 minutes.
