Italian Sausage & Tortellini Soup
This Tortellini Soup recipe is loaded with spicy Italian sausage, cheesy tortellini, creamy broth, and baby spinach. It makes for an easy, 30-minute meal on a busy weeknight!

- 1 package hot Italian sausage 13 oz or 375g
- 1 package fresh cheese tortellini 12 oz or 350g
- ½ sweet onion diced
- 3 cloves garlic minced
- Pinch red pepper flakes
- Salt & pepper
- 1 Tbsp fresh thyme chopped see note *
- 1 Tbsp fresh parsley chopped see note *
- ½ Tbsp fresh rosemary chopped see note *
- ½ Tbsp fresh basil chopped see note *
- 6 cups chicken stock or 1400 ml
- 1 cup heavy cream or 250 ml
- 2 handfuls baby spinach roughly chopped
In a large pot over medium-high heat, brown sausage meat and onion until sausage is cooked and onion is softened, about 5 minutes. Drain or blot away excess grease if necessary.
Add garlic, red pepper flakes, salt & pepper, and herbs. Cook until fragrant, about 1 minute.
Add chicken stock and stir to scrape up any browned bits off the bottom of the pot.
Add heavy cream. Bring soup to a boil and then reduce heat to a gentle simmer. Add tortellini and cook until tortellini is done according to package directions. The brand I used took 6 minutes.
Turn off heat and add chopped spinach, stirring until spinach is wilted, about 1 minute. Taste and add more salt if needed. Did you make Sausage Tortellini Soup?
