Not only does this dressing make a perfect Greek salad, but it also makes a great marinade for chicken or fish. Try it over roasted potatoes, in a pasta salad, or drizzled on a chicken wrap!

Let’s talk about the ingredients
Olive oil – Extra virgin olive oil works best, as the delicate floral flavour really shines.
Red wine vinegar – When mixed with olive oil, it makes that classic Greek flavour.
Herbs – Here I’ve used dried herbs for simplicity. If you have the fresh herbs, you can use them instead by doubling the amounts.
Dijon mustard – Mustard is a great emulsifier! It does not overpower the other flavours, and the dressing comes out smooth & creamy.

It is incredibly easy to make your own dressing! Simply add the ingredients to a jar with a lid, and shake to combine.

- 1 Jar with lid or bowl and whisk
Ingredients
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- ½ teaspoon dried parsley
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil leaves
- ½ teaspoon ground black pepper
- ¼ teaspoon kosher salt
Instructions
- Combine all ingredients in a bowl and whisk vigorously to combine. You can also add the ingredients to a jar with a lid, and then shake to combine until completely mixed and smooth.
