2 mixing bowls
1 loaf pan 9x4 or 8x3
1 masher
1 Whisk
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup cocoa sifted to remove lumps
- 2-3 very ripe bananas
- 1/2 cup salted butter softened
- 1/2 cup sour cream
- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1/4 cup chocolate chips plus more for sprinkling; optional
- 1/4 cup chopped walnuts optional
Preheat oven to 350° F. Spray a loaf pan with cooking spray and set side.
In a small bowl, combine flour, baking soda, and sifted cocoa powder and whisk to combine. Set aside.
In a large bowl, peel and mash bananas until very smooth. Add butter, sour cream, both sugars, vanilla and egg, and stir to combine.
Fold in dry ingredients, plus chocolate chips and walnuts, until just barely combined. You don’t want to overmix the batter.
Spoon the batter into prepared loaf pan, smoothing the top. Sprinkle more chocolate chips on top if desired.
Bake for about 60 minutes, or until a wooden skewer inserted into the centre of the loaf comes out clean.
Allow to cool completely before slicing into 1 inch slices.
